Greek Yogurt & Avocado Dip
Avocado is very en vogue, with good reason. It's such a luxurious vegetable and tastes great by itself or dressed up. I need a lot of tartness whenever I eat avocado and this simple dip is a great balance of richness and sour. I made this one afternoon when I was itching for some pita chips and had three key ingredients in my fridge. You can make this with sour cream but it's really not necessary - plain Greek yogurt is so rich as it is. You can also add a little teaspoon of parmesan for an extra layer of flavor.
Ingredients
1 ripe avocado
1 garlic clove
4 tbsp plain Greek yogurt
Juice of 1/2 lemon
Salt, pepper, red pepper flakes & cilantro to taste
Method
Mince the garlic and throw everything into a bowl. Mash it up with a fork or process in a food processor.
Serve with pita chips, tortilla chips, veggies, or use as a spread on sandwiches and flatbreads.
